Love fish and chips but don’t enjoy the greasy feeling you get after eating fish and chips from the local chippy?

Here’s a delicious homemade version that is oven-baked (so fewer calories) and crusted in Parmesan cheese, breadcrumbs and parsley to make it super tasty.

What You Will Need to Make Oven-Baked Fish

Ingredients

white fish fillets
milk
garlic
dried breadcrumbs or Panko
freshly grated parmesan cheese
fresh parsley
salt and pepper

Parmesan Fish – The Steps

This is one of my favourite Hoki fish recipes.

Here’s how I’ve been making these fish fillets for nearly twenty years.

Step 1 – Soak the fish

The first step is to soak the fish for 10 minutes in a mixture of milk and garlic.

Why do we soak the fish in milk?

It takes away some of the ‘fishy smell’ that fish can get if it’s not super fresh. If you have fresh fish or fish that was snap-frozen, you can probably skip this step. However…

While the milk is to get rid of the fishy smell, it also adds a little garlicky flavour.

You don’t have to add garlic if you don’t want to, but if you like garlic, putting it in the milk adds a subtle hint of garlic flavour.

The next step is to crumb the fish.

Step 2 – Bread the Fish

Remove the fish from the milk one at a time and press them into the breadcrumb mixture, turning to coat. It’s easier if this is in a rectangular tray, but a plate works fine as well.

Step 3 – Cooking the Fish

Place the fish on a greased baking tray and press in some extra breadcrumbs if you like.

Spray the top with oil or drizzle on some oil or melted butter.

Cook in a hot oven (200°C) until cooked through and golden (about 20 minutes).

What Fish Should You Use for Homemade Fish and Chips?

For this dish, I used frozen Hoki fillets from New Zealand. These were $1.40 a fillet, so for a family of four with homemade chips, the whole meal came in under AU$10.

But the frozen fillets often go on sale, so this meal can come in under AU$7. That’s a whole lot cheaper than takeaway.

Ingredients

  • 4 white fish fillets
  • 1/2 cup milk
  • 1 clove of garlic, crushed
  • 1/2 cup of dried breadcrumbs
  • 1/4 cup of freshly grated parmesan
  • 2 Tbsp freshly chopped parsley
  • salt and pepper to taste
  • 1 Tbsp. olive oil, olive oil spray or melted butter

Instructions

  1. Preheat the oven to 200°C (390°F) and grease an oven tray with oil or butter.
  2. Mix the milk and garlic in a bowl and soak the fish fillets for 10 minutes or so, turning to coat.
  3. On a plate or tray, mix together breadcrumbs, parmesan and parsley.
  4. Drain the fish fillets, leaving some of the garlic on if you like for extra taste.
  5. Coat the fish fillets in the breadcrumb, pressing the coating onto the fish.
  6. Place the fish on the baking tray and spray with oil or drizzle with a little oil or butter.
  7. Cook in a hot oven for 20 minutes or until golden.

Notes

You may need less cooking time depending on the thickness of the fillets. The fillets will be dry if the fish is overcooked.

    Do you use the Aldi Skinless Hoki from their freezer section for this recipe? I was given some lovely thick cutlets of Murray Cod and may use your recipe to oven bake these. They are presently in the freezer, as my hubby and I are the only ones who will eat fish here now. My fussy girls!! They are TOO well fed. It gets frustrating when you see fabulous recipes all the time, and have to be restricted because the fussy eaters will refuse it! (and I DO NOT like food waste)

I think I’m the only frugal person who has never shopping Aldi – the closest store is 30 mins away, so I don’t think it’s worth it for me, but I think what I have bought is similar – skinless something. Murray Cod sounds lovely, fresh caught? Despite moving to coastal QLD, there’s not much fish to catch and not very good fish shops and it’s expensive.

    My husband is a fussy eater, but I give him things he doesn’t like anyway, sometimes he is surprised that he actually likes stuff.

  3. I used to travel 50 minutes to Aldi before they finally opened in our town!!
    I never bought frozen items (like fish) as I was always concerned they would thaw out (especially fish). Yes, a fisherman friend of my husband gave us some fresh caught murray cod. He has filleted it and cut into cutlets too! I’m sure it will be lovely. We should get two meals from it anyway since the fussy girls won’t participate!
