Homemade Lime Aioli Recipe with Chilli

Here’s a quick and easy homemade lime aioli recipe with chilli that you can whip up in minutes and that makes an everyday meal, special.

A drizzle of good sauce can turn an ordinary meal into something special, without being expensive or difficult.

One such good sauce is aioli.

Aioli is basically mayonnaise with garlic in it. You can use fresh garlic, garlic powder or for the most sensational flavour, roasted garlic.

Mayonnaise has a reputation for being hard, but the key to good mayo is to be patient. Take your time as you add the oil and mix well, making sure all the oil is incorporated before adding more oil.

Once you’ve made your aioli with lime, add the chilli. Any chilli you like, fresh red chilli or dried.

For an extra lime punch, add a little finely grated lime rind.

I made this the other night with pureed fresh mango in it also. Yum!

Lime Aioli Recipe

Ingredients

  • 1 egg yolk
  • 1/2 tsp Dijon mustard
  • 90 ml or approx 1/3 cup of light flavoured oil
  • 1-2 cloves of garlic, crushed finely
  • 1 – 2 chillies finely chopped
  • juice of 1/2 lime

Instructions

  1. Whisk egg yolk and mustard until creamy.
  2. Add the oil 1 tablespoon at a time, whisking continuously.
  3. As the aioli thickens you can add the oil a little more quickly.
  4. Add the crushed garlic to the mayonnaise and stir well. Add more or less according to your preference.
  5. Add the chillies and lime, again adjusting to taste.
  6. Serve cold.

Notes

For a milder garlic flavour, roast the garlic in its skin first.
